Sausages and Baked Sweet Potato
1. Pre heat oven to 200°C
2. Half sweet potatoes and put on a baking tray, drizzle with oil & salt. Cook for 25-35mins (depending on potato size)
3. 20 mins after this, add your sausages to the oven for 25 mins.
4. When your potatoes and sausages are almost done, put washed kale on a baking tray, drizzle with olive oil and season. Cook for 10 minutes
5. Drain and rinse canned chickpeas. Drizzle with oil and season and add to kale baking tray. Cook for 5-8 minutes depending on how crispy you want them.
6. Sauce time: Combine Yoghurt, Tahini, Garlic, Salt, Pepper and squeeze of lemon juice to a bowl and stir.
7. Plate up: Cut into sweet potato and fill with chickpeas and sliced sausages, drizzle with tahini sauce and serve kale on the side.
