Chip it real good

  1. Preheat oven to 200°C (180 fan).
  2. Toss chips with oil, salt and roast 20 to 25 mins.

  1. Heat a pan on medium high.
  2. Add a little oil, then cook fillets:
  3. Pan fry on a medium heat in 1 tbsp of oil for 4 to 6 mins, turning frequently until evenly seared on all sides.
  4. Press gently for a proper sear
  5. Rest for 2 mins before serving

Steam or boil broccoli for 5 to 6 mins until tender.

  1. Same pan (for all those juices) on a lower heat.
  2. Melt butter, add garlic (1 min)
  3. Stir in peppercorns + flour (1 to 2 mins)
  4. Gradually whisk in plant based milk
  5. Simmer until thick and glossy

(Upgrade: Add soy sauce or vegan stock for deeper flavour).
