Lightly Seasoned Tofu & Quinoa Salad

Cook the tofu: Heat a drizzle of oil in a non-stick pan over medium-high heat. Add your THIS™ Is Lightly Seasoned Chickpea Tofu and fry, turning until golden and crispy on all sides.

Make the dressing: In a bowl, whisk peanut butter, soy sauce, lime juice, maple syrup (or honey) and ginger. Add warm water until smooth and pourable.

Build your bowl: In a big bowl, toss together quinoa, red cabbage, carrot, cucumber, herbs and spring onion. Top with the crispy tofu, drizzle with dressing and finish with sesame seeds.

Toasted Sesame Seeds (optional but elite)
1 tbsp

Peanut Butter
2 tbsp

Grated Ginger
